One Dish 'Tik Tok' Veggie Pasta
Looking for a quick and easy mid week meal? Then look no further than this ‘Tik Tok’ inspired one dish pasta! Feta is a fantastic source of calcium which is great for strong and healthy bones. It is also a rich source of chloride which helps digest the food we eat. As always, chicken is an easy addition to this dish if you can’t live without your protein!
Method
Preheat oven to 200C.
In a medium baking dish, combine oil, garlic, tomatoes, pumpkin and eggplant. Season with salt and pepper and toss to combine.
Place feta in centre of vegetable mixture. Sprinkle with dried basil and oregano over the vegetable mixutre.
Bake for 40-45 minutes, or until vegetables are brown and soft and feta is golden on top.
Meanwhile, in a large pot of boiling water cook pasta according to package instructions. Reserve 1/2 cup pasta water before draining.
Once pasta and vegetables are cooked, stir vegetables to combine with feta then add spinach and pasta and pasta water until completely combined.
Garnish with Basil to serve.

150g Feta
1 x punnet cherry tomatoes
3 x cloves garlic, crushed
200g pumpkin, peeled and cubed
1 small eggplant
200g spinach
350g wholemeal or pulse pasta/spaghetti
2 tbsp dried basil and oregano
1 x bunch fresh basil
