Chocolate Raspberry Banana Bread

This super quick, super simple, no fuss, nutrient packed banana bread is the perfect addition to your summer snack rotation. It’s packed full of fibre, antioxidants and quality carbohydrates to keep you and your kids full until the next meal!

We’ve used chocolate and raspberries to flavour this recipe but the combinations are endless - banana cinnamon, choc hazelnut, vanilla blueberry are all lovely flavours you can swap to keep your Banana Bread interesting!

Method

  1. Preheat oven to 180 degrees

  2. Peel and mash bananas into large bowl. Mix through all dry ingredients

  3. Add eggs and yoghurt and combine well

  4. Add dark chocolate and raspberries (or other chosen ingredients) and gently mix to combine

  5. Line a loaf tin with grease proof baking paper

  6. Pour the mixture into tin and top with sprinkle of coconut, chocolate chunks or raspberries

  7. Place in preheated oven for 60-70 minutes or until cooked through centre and golden brown on top

  8. Slice and serve with fresh fruit or yoghurt as a nourishing healthy summer snack

Ingredients

  • 3 Bananas - over ripe is best

  • 3 cups almond meal

  • 3 eggs - (Or vegan friendly plant eggs - 3 tbsp flax/chia seeds with 9 tbsp water - let sit for 5 minutes

  • 2 tbsp yoghurt

  • 1 cup coconut

  • 1 cup frozen raspberries

  • 100g 80% dark chocolate
