Bone Building Berry Ice-Blocks

Cooling down in summer doesn’t mean your bones need to suffer - a bone healthy greek yoghurt ice block and a little bit of Vitamin D by the pool will help every body from every age build and maintain strong and healthy bones … Just remember always to be sun safe

Method

  1. Place berries, 2 tbsp honey and vanilla extract in saucepan. Place on medium heat until berries start to break down/bubble

  2. Allow to simmer for 5 minutes, then remove from heat and set aside to cool.

  3. While berries are cooling, blend Greek yoghurt and lemon juice in a medium bowl. Mix remaining honey to taste until sweet enough to suit your liking

  4. Once cooled, pour berries into yoghurt mixture and gently fold through yoghurt mixture until a marble effect is achieved.

  5. Transfer the berry and yoghurt mixture into ice-block mould and insert ice block sticks. Place in freezer for at least 4 hours

  6. To serve - run cool water around the outside of the mould for about 10 seconds then gently remove the icy poles - enjoy immediately!

  • 200g of blueberries or raspberries - fresh or frozen

  • 2 tsp vanilla extract

  • 2 1/4 tablespoons honey to tasts

  • 2 cups whole Greek yoghurt

  • 1/2 small lemon juiced
